Red Pepper and Almond Dip

Red Pepper and Almond Dip

Have you noticed that most bought dips and hummus have sneaky preservatives hidden in them? The one sure way to ensure you escape these nasty little numbers is make your own. The recipe for Red Pepper and Almond Dip are as follows:

INGREDIENTS:

• 2 – 3 fire-roasted large red peppers – drained (you can buy these in a jar from a deli or supermarket)
• 1C of roasted Almonds (blanched or with skins)
• 2 teaspoons of Cumin Seeds (dry toasted in a pan for a 1 – 2 mins)
• 2 tablespoons of good quality grassy olive oil
• Salt to taste

PROCEDURE:

1. Add all ingredients into a food processor (except the salt) and blend till smooth.

2. Taste and season with salt accordingly. If you like a strong cumin flavour add ½ teaspoon of cumin powder.

3. Eat with warm flatbread.
